Do you love granola? I LOVE granola❤️.
I love granola because it’s so versatile. You can eat it just like that or add some milk/yogurt and/or even add fresh fruits!
The great thing with homemade granola is that you know exactly what you put in it and you can make it the way you want, and it’s pretty healthy too.

INGREDIENTS
4 cups old-fashioned rolled oats
1 cup pecans
1 cup slivered almonds
1 cup pumpkin seeds
1 cup pistachios
1 cup dried cranberries
1/2 cup unrefined coconut oil
1/2 cup maple syrup
1 tablespoon honey
1 tablespoon vanilla extract
1 teaspoon cinnamon
a few pinches of Maldon salt
INSTRUCTIONS
Preheat oven to 350 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper.
In a large mixing bowl, combine the dry ingredients (oats, nuts, seeds and salt) and stir.
Add the coconut oil, maple syrup, honey and vanilla extract. Mix well to make sure everything is coated.
Pour your granola on the lined baking sheet and spread it out as even as possible. Bake until golden brown, approximately 25-30 minutes, stirring it about half way.
Make sure you bring the edges back to the center of the baking sheet, so it doesn't burn.
When you get it out of the oven, add the dried fruits and press the granola down.
Let it cool completely before breaking it, this helps keeping some bigger chunks.
Store in an air tight container at room temperature.
