Peach crumble

This is one of my boyfriend's favorite desserts! And I have to admit it is pretty damn good anytime of the year. When peaches are not in season, I go with frozen ones and stay in budget. You can of course use any fruits you like. I have made this dessert with blueberries and strawberries and also with apples.


INGREDIENTS

  • 2 lbs peaches (fresh or frozen)

  • 1/4 cup light brown sugar

  • 1 tablespoon lemon juice

  • 1 tablespoon cornstarch or flour

FOR THE CRUMBLE

  • 1 cup flour

  • 1 cup old-fashioned rolled oats

  • 1/4 cup light brown sugar

  • 1/4 cup granulated sugar

  • 1/4 teaspoon salt

  • 1 stick of cold butter (8 Tbsp)


INSTRUCTIONS

  • Preheat your oven to 375 degrees Fahrenheit.

  • I like to precook my fruits a little bit, so I put them in a pot with the brown sugar, lemon juice and cornstarch and let them get a little softer. This only takes a few minutes.

  • While they are cooking, prepare the crumble mixture.

  • In a large bowl, mix flour, old-fashioned rolled oats, light brown sugar, granulated sugar and salt. Cut the cold butter in little pieces and add them to the dry ingredients. Using your finger, mix everything together until you have little crumbles.

  • Once the fruits are soft, put them in a baking dish and cover them with the crumble mixture.

  • I usually put my baking dish on a baking sheet, just in case it bubbles over.

  • Bake it in the oven for about 30 minutes.

  • Serve it with a scoop of vanilla ice cream.
