White bean avocado dip

Here is a super simple and healthy recipe. Everything avocado makes me happy.
I love to eat it with fresh cut veggies, pita or bagel chips. It is a pretty refreshing dip thanks to the fresh avocado and lemon juice. It is great to make when you have people over as they would be surprised by the flavor and creaminess of this dip!

INGREDIENTS
1 avocado
1 can of white beans (navy or cannellini) drained and rinsed
2 garlic cloves
5 tablespoon lemon juice
3 tablespoon water
1 tablespoon olive oil
salt and pepper
½ teaspoon ground cumin
1 small handful of fresh herbs, chopped
INSTRUCTIONS
Place all the ingredients in the bowl of a food processor. Puree until very smooth and fluffy, scraping the sides down with a spatula as needed. Taste and adjust seasoning, if necessary.
Garnish with the chopped fresh herbs of your choice.
Serve the dip right away or put it in the fridge until ready to go!
